F2C Vegan Recovery Mud Pie Cake

Our series sponsor, F2C Nutrition, makes several fantastic nutrition products that will help you train, race and recover faster this year. Today we’d like to share how you can get creative with F2C products — instead of just mixing up drinks, you can use F2C to create delicious treats, like our ambassador Jessey the Elf does! Here is one of Jessey’s favourite recipes, made with F2C Nutrition’s Vegan-Pure protein (chocolate).

A bit about the product:

Vegan-Pure™ from F2C Nutrition contains protein from only plant-based sources (hemp protein, brown rice protein, pea protein, flax seed protein and chia seed protein). Vegan-Pure™ is a “clean”, surprisingly great-tasting protein source that has been precisely formulated to provide a superb source of readily available amino acids.

2 scoops F2C Elite Vegan Pure Chocolate
3/4 cups flour
1 cup sugar
1/4 cup unsweetened cocoa powder
1 tsp. baking soda
1/2 tsp. salt
1/3 cup coconut oil
1 cup water
1 tbsp. vinegar
1 tsp. vanilla extract
* Optional*1/2 cup chopped walnuts

*Preheat oven to 350 degrees
*Mix all ingredients together. Batter will be quite dense and dough like
*Spread into nine inch round greased baking pan (I use coconut oil to grease the pan)
*Bake on middle rack for 15-18 minutes (not convection) – place a cookie sheet on the rack below as sometimes it overflows a bit
*Cool on wire rack and serve
